Ingredients
- 1 pinch sea salt
- 1 lb. winter greens (kale, swiss chard, arugula, spinach)
- 4 tbsp. extra-virgin olive oil
- 3 cloves garlic
- 2 tsp. red chili flakes
- 1 lb. spaghetti
- 1/4 cup grated Pecorino
- grated lemon zest to taste

- Bring large pot of water to a boil over high heat, add salt. When salt is dissolved, add greens to pot. Blanch for 1 minute until tender then transfer to a colander and let cool for 10 minutes. Squeeze out excess water.
- Heat olive oil over medium heat. When oil shimmers, add garlic, chilies and cook until golden for 5 minutes. Add greens and cook until leaves get darker. No more than 10 minutes.
- Bring pasta water to boil over high heat, add salt and pasta. Cook until al dente, drain and toss into pan with olive and greens. Toss well, add extra olive oil and grated pecorino plus lemon. Grate extra cheese as you like.
